It's a bit late, but for future designers, an alternative is the mind blank ability. This protects a monster from being affected by incapacitating spells and is nice for bosses for whom a one-hit-kill is thematically deflating.

Does it protect them from Stinking Cloud?  Because that's my default spell to incapacitate enemies, especially if they're spellcasters.

Ha, well done.

I guess you'd want to go with the standard undead immunities: poison/para, sleep/charm. I guess that would do it?
